Marbled cake with black cherries

First we prepare the cherries, that is, we wash them and remove the seeds.

Mix the egg whites with a pinch of salt.

Add the sugar and vanilla sugar and mix for another 2-3 minutes, alternating the addition of sugar and hot water.

Then follow the yolks rubbed with oil and mix again.

At the end, incorporate the flour mixed with the baking powder, using a spatula.

Pour the composition into a tray (approx. 25/35 cm) lined with baking paper.

We keep about 6-7 tablespoons of the composition, which we mix with cocoa and a tablespoon of milk.

With a teaspoon we draw stripes with the cocoa composition then with a stick we mix a little with the white composition (see pictures).

Place the cherries on top and put the tray in the preheated oven at 175 degrees for 25-30 minutes.

Remove from the oven and then from the pan and when it has cooled a little, dust with powdered sugar, slice and serve.

The recipe is from Click Pofta Buna magazine no. 5/2012 and appears right under the title of Marbled Cherry Cake, although I know it is also called Danube Waves. The composition of the cream differs a lot, in the magazine it's cheese with butter, but I also saw it with pudding and look, I also changed it and I made it with mascarpone. Plus the fruit differs from cherries to apricots or others. I don't know what the original recipe will look like, but the cake is very good looking and delicious!

250g butter,
200g old powder,
1 packet of vanilla sugar,
5 eggs,
375g flour,
150 ml of milk,
1 packet of baking powder,
20g cocoa,
300g cherries.

200g butter / optional mascarpone,
200g old powder,

250g cow's cheese,

200g dark chocolate.

Bake the cake in the preheated oven at 160 degrees for 45 minutes (20 'with the Delimano - tray), then let it cool in the pan.

5. For the cream, beat the soft butter with the powdered sugar. Add the cottage cheese, vanilla sugar and lemon juice. I used mascarpone instead of butter. I rubbed the cottage cheese with the sugar, added the mascarpone and mixed. I haven't used lemon juice now.

6. Remove the countertop from the tray - the tray has remained almost clean. - nothing stuck and did not burn, for. that it baked very quickly, I told you, in 20 minutes it was ready! :-)

7. Spread the melted chocolate over the cream cheese and make "waves" with a fork.

Let it cool to thicken the chocolate. Cut into rectangles with a knife left in hot water.

After that, increase the speed by another 2 steps and mix for another 3 minutes. Remove the mixer and lightly incorporate the flour with a spoon. Do not mix for too long. The result is a relatively thick dough. One third of the composition is placed in another vessel.

Filling: mix the cheese with the egg, sugar and vanilla sugar, until smooth.

The two thirds of the dough are poured into a stove tray lined with baking paper greased with oil. You may need a spoon to even out the dough with its back. Sprinkle the cherries over the dough, then pour the cream cheese over them, which you will also even out with the back of the spoon. Pour the rest of the dough on top - the third set aside.

Place the tray in the preheated oven, over medium heat, for about 40 minutes, or until the toothpick comes out clean.

Glaze: mix all the ingredients well until they become like a paste, which is put in a pos and a grid is formed over the cake.

I had guests and I didn't have time for the icing, I powdered the cake and served it still hot.
It was a delicious and light dessert.

Marbled apricot cake

Scented and meaty, sweet and sour at the same time, apricots are among the stars of the season and it would be a shame not to take advantage of them in all possible ways: raw, put in cakes and pies, made into compote or preserved in the form of jam. In terms of cakes, you can go for the classic version, of simple fluffy pandispan, with or without a layer of meringue on top (find HERE the recipe with peaches and just replace the fruit), or you can try the version I propose today, marbled cake. The bitter taste of cocoa powder goes great with the taste of ripe apricots, and to complete the & # 8220marriage & # 8221 we call for help a little almond essence. We get, quickly and quite simply, a cake that is not only delicious, but also looks good.

If you want, you can peel the apricots thinly by scalding for 2-3 minutes. I left them as such, because I didn't want them to lose their shape. You should also know that I used a 23 & # 21536 cm tray and that, from the quantities below, 15 cubes of cake came out.

& # 8211 baking powder 1 sachet
& # 8211 sugar cough 200 g
& # 8211 butter (80% fat) 170 g !! at room temperature
& # 8211 vanilla essence 1 tsp
& # 8211 almond essence 1 teaspoon
& # 8211 black cocoa 30 g
& # 8211 whole milk (3.5% fat) 225 ml
& # 8211 apricots 8 pcs. (550 g)
& # 8211 a pinch of salt

Preheat the oven to 180 degrees Celsius, grease the pan with a little butter and dust it with flour. Sift the flour into a deep plate and mix with the baking powder and salt. Put the soft butter in a bowl and mix it with the caster sugar until you get it like a cream. Add the vanilla essence and the almond essence, then incorporate, one by one, the eggs. Be careful not to put the next egg until the first one is perfectly incorporated! Add flour and milk, alternately. At the end, you will have a homogeneous dough and suitable as a firmness.

Divide it in two, and put cocoa in one of the parts. Unwrap the apricots in half and, if necessary, wipe them well with water (by dabbing with paper napkins. Put a simple dough with a spoon, taking care to leave space between the dough & # 8221. In the open spaces, put then make the cocoa dough, make a few spoonful movements from one end of the tray to the other so that the two types of dough combine a little.

Put the tray in the oven and leave for 35-40 minutes or until the cake passes the toothpick test (if you prick it with a toothpick, it comes out clean). Allow the cake to cool completely before cutting and removing from the pan. If you want, you can powder the cake with powdered sugar (I left it as such to better see the black and white combination and not to make the cake too sweet).
