Rub the butter together with the sugar and vanilla sugar until the sugar melts.

Gradually add the milk and yolks.

After mixing well, we put the flour lightly, in which we put the baking powder, so as not to make lumps.

Beat the egg whites with a pinch of salt and incorporate them into the rest of the composition, stirring from the bottom up.

From the composition we put aside a cup of water that we mix with the spoons of cocoa.

The rest of the composition is divided into two equal parts.

Prepare two cake trays, or cake as I used, on which I place baking sheets.

Put the composition in the trays and pour the cocoa composition in the middle.

With a fork we spread the cocoa composition.

Bake over medium heat until cooked through.

The toothpick test is done before removing the cakes from the oven.


Meanwhile, make the icing by melting the butter with the chocolate and adding the walnuts.

As soon as we take the cakes out of the oven, we put the icing over them.

For this recipe I will use the multifunctional food processor Ankarsrum. I will mount the plastic bowl and the double targets with which I will mix the egg whites.

First, separate the eggs and beat the egg whites with a little salt until they harden. Then gradually add the sugar until you get a meringue. Separately, beat the yolks with the oil, using a whisk. Add fresh orange juice and vanilla. Pour the baking powder over the flour and sift it over the composition. Mix lightly with a spatula until all the flour is incorporated.

Put the meringue over the cake composition, little by little, mixing with the spatula from bottom to top. Divide the composition into two equal parts. Put hot water over the cocoa powder and incorporate it into one of the cake bowls. Put the orange peel in the other bowl.

Line two forms of cake with oil and flour and alternate the two compositions, starting from the center of the form and always putting on top, in the same place.

Put the cakes in the preheated oven at 170 degrees and leave them for 40-45 minutes. Take the toothpick test to see if I'm ready.

Remove the trays from the oven, then pour the cakes on a clean towel and leave to cool. Powder them with sugar and cut into generous slices.

3.Add the eggs to the butter composition in very small portions and stirring constantly with the mixer. In the end, the composition may layer a little.

4. Combine the flour with baking powder, then sift the mixture, in a few steps, directly into the egg bowl, stirring with a spatula, but not for long, just until the dough is smooth.

5. Pour the milk and mix once more.

6. Divide the dough into 2 equal parts, about 315 gr each.

7. In a bowl add sifted cocoa, and in another - sifted starch. Stir until smooth.

8. Grease the form with butter and sprinkle with flour.

9. Alternate the layers of white dough and chocolate dough. The dough is dense and should be spread with a spoon.

10.Insert the form in the preheated oven to 160 ° С for 1 hour 5 minutes, depending on the oven. Take the toothpick test.

11. Remove the cake from the oven, let it cool a bit, then transfer it to the grill.

12.Prepare the glaze. Melt the butter, then add the chocolate pieces and leave for a few minutes. Stir until smooth.

13. Cover the cake with icing and sprinkle with chopped walnuts.

I have long wanted to make a cake in three colors, Neapolitan something, anything, so I chose something very simple to begin with Marbled check in three colors (Neapolitan marble bundt). But I'll start by explaining very briefly where the name comes from Neapolitan: well although it normally means an inhabitant of the Italian city of Naples, Neapolitan has become a famous term in the world of sweets (and not only) due to the three-flavored ice cream created somewhere in the 19th century by a famous Italian confectioner. Because the three colors look so great on the plate, Neapolitan it has expanded from ice cream to cakes, cakes, cookies and anything else that bears the colors brown (chocolate), pink (strawberries) and white (vanilla).

If you need a little inspiration here are some of my favorite cakes:

  • 230g soft butter (80% fat)
  • 250g powdered sugar
  • 5 medium eggs
  • 150g Greek yogurt
  • 330g whipped milk
  • 400g sifted flour
  • a teaspoon and a half of baking soda
  • a teaspoon and a half of baking powder
  • a teaspoon of salt
  • & # 8531 from the basic cake
  • 180g melted chocolate (50% or 65% cocoa)
  • a teaspoon of cocoa

  • little pink food coloring
  • 2 tablespoons flour
  • 200g frozen or fresh strawberries (cut into small pieces and drained of juice)

Some comments on ingredients and how to prepare:

  • for the chocolate cake I recommend you to use very good quality chocolate with a high cocoa content (minimum 50%) and to avoid household chocolate. You can also add large chunks of chocolate, chopped walnuts, raisins or my favorite, black rum (about 30 ml) plus another 1-2 tablespoons of flour to balance the texture
  • for the vanilla cake, if you don't have an extract, you can add vanilla sugar, but in this case you don't have to add the 2 tablespoons of flour (or maybe just a tablespoon)
  • for the pink cake, the food coloring is optional, you can only add strawberries (fresh or frozen) or 2 tablespoons of strawberry jam (be it with whole strawberries or large pieces)
  • be careful at the baking temperature, because the dough is quite wet, the cake must be in the oven for a long time (I said 45-50 minutes) and the temperature should not exceed 170 degrees because it would burn outside and it would remain cruel inside
  • After it has baked and before taking it out of shape, I recommend that you peel the cake carefully with a very sharp knife on the edge of the inner ring.
