- 1 cup sliced celery cut very thinly on a diagonal
- 1/4 cup quartered pitted green olives
- Freshly ground black pepper
Bring farro and 3 cups water to a boil in a large saucepan; season lightly with salt. Reduce heat to low and simmer until tender, 45–60 minutes. Drain and let cool slightly. Transfer to a medium bowl; add sliced celery and next 4 ingredients and toss. Season to taste with salt, pepper, and lemon juice.
