If you've never before thought of using pulses in a stir-fry, here's a satisfying recipe to try. Tossed with pasta, this is a great meal made in one pot.

  • 250 g (8½ oz) macaroni
  • 170 g (6 oz) fine green beans, cut in half
  • 2 tsp extra virgin olive oil
  • 15 g (½ oz) unsalted butter
  • 1 bunch large spring onions, about 300 g (10½ oz) in total, sliced
  • 2 tbsp crème frache
  • 2 tsp wholegrain mustard
  • grated zest of 1 lemon
  • 225 g (8 oz) thickly sliced cooked ham or smoked pork loin, trimmed of all fat and cut into fine strips
  • 1 can red kidney beans, about 410 g, drained and rinsed
  • 1 can cannellini beans, about 410 g, drained and rinsed
  • 3 tbsp chopped parsley
  • salt and pepper

  1. Cook the pasta in a large pan of boiling water for 10–12 minutes, or according to the packet instructions, until al dente. Add the green beans for the last 3 minutes of the cooking time. Drain well.
  2. While the pasta is cooking, heat the oil and butter in a large non-stick frying pan or wok until the butter starts to sizzle. Add the spring onions and cook for 3–4 minutes over a moderate heat, turning frequently, until softened.
  3. Blend together the crème frache, mustard and lemon zest, and add to the pan or wok. Stir in the ham or pork and the canned kidney and cannellini beans. Cook gently for 2–3 minutes, stirring frequently, until piping hot.
  4. Season with salt and pepper to taste. Add the pasta and green beans, and stir to mix. Sprinkle over the parsley and serve.

Some more ideas

For a vegetarian version, replace the ham or pork with a 225 g (8 oz) packet of smoked tofu, cut into 2.5 cm (1 in) cubes. * Make a smoked turkey, apple and bean saut. Core and thickly slice 2 dessert apples. Cook in 15 g (½ oz) butter in a non-stick frying pan over a moderate heat for 3–4 minutes, turning once, until golden on both sides and just tender. Remove and set aside. Put 1 can borlotti beans, about 410 g, and 1 can flageolet beans, about 410 g, both drained and rinsed, in the pan. Add 225 g (8 oz) thickly sliced smoked turkey, cut into fine strips, 3 tbsp apple juice and 2 tsp maple syrup. Heat through gently for 2 minutes, stirring occasionally, then return the apples to the pan together with 1 tbsp chopped fresh sage. Season to taste. Heat for a further minute. Serve with crusty French bread.

Pulses such as red kidney and cannellini beans have a low GI (Glycaemic Index) factor, which means they release energy slowly into the bloodstream and so can help to control hunger and appetite. * Like all onions, spring onions contain some vitamin C and B vitamins. * Green beans are a good source of dietary fibre and contain valuable amounts of folate.

Jan's Amish Three-Bean Salad

Jan here, home from a week long trip to visit family back East in Amish Country.

Now some of you might think Amish Country is in Lancaster County, Pennsylvania, or even Holmes County, Ohio. And while there are large Amish settlements in both of those places, real Amish Country is in LaGrange and Elkhart Counties in northern Indiana.

Of course, when you visit Amish Country, you have to eat. And yes, we went to the best restaurants and had the best soups, mashed potatoes and PIE.

But I thought you'd like a look at my dad's refrigerator. This is the kind of stuff he keeps on hand for lunches.

These are the meats for sandwiches.

On the left is turkey. the kind normal people buy.

The top center? That's Lebanon baloney. Pure heaven. Oh my. I can taste it now, just looking at that slice.

But the other stuff? Souse.

Souse is made by taking all the leftover pig stuff after you're done butchering, adding in some onions and peppers, adding some good, rich broth, putting it all in a loaf pan and letting it solidify into a block of. this.

I tried it. I won't be making any at our house. I'll let your imagination figure out what parts of a pig would be leftover after making ham, bacon and sausage.

When you make a sandwich with wheat bread, spicy mustard, turkey and some of that Baby Swiss, you've got yourself a good sandwich!

Here's the final thing to round out a good, Amish Country lunch - Three Bean Salad.

Dad buys his from Das Dutchman Essenhaus (just the best restaurant in the area. Take a look at it here), and it's the tastiest commercial Three Bean Salad I've ever had.

My mom used to make it quite often in the summer, and several years ago I developed my own super simple recipe.

Jan's Three Bean Salad


1 can green beans, drained
1 can yellow (or wax) beans, drained
1 can kidney beans, drained
1/2 small onion, sliced thin and separated into rings
1/4 cup green pepper, cut in 1/2" chunks
1 cup Italian salad dressing or use this recipe for a more traditional dressing:
- 1/2 cup vinegar
- 2 Tablespoons oil
- 1/4 cup sugar
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- pinch black pepper

Combine all the ingredients and refrigerate for at least 90 minutes. Drain the excess salad dressing before serving.

I`m so excited for Naomi`s story! And how exciting that you got to go back to Amish country. I much prefer the plain and simple fare compared to the fancy dancy food structures fancy restaurants serve. I never know how to eat those!

There isn't any food more plain and simple than mashed potatoes, bread, cheese, a veggie or two. and for me, a bit of roast beef or savory stew. :)

But the simple meals, while they don't "delight the eye" as much as those fancy meals at pricey restaurants, certainly satisfy something more than an empty stomach, don't they?

One of my favorite scenes from the movie, The Fellowship of the Ring, is when Gandalf is visiting Bilbo early in the story, and Bilbo has a loaf of brown bread and a hunk of cheese on the table, and a kettle steaming on the fire. Throw in a crisp apple, and you have a meal fit for a king.

Every once in a while I get to take an iconic photo, and this is one of my favorites. That barn is finished now, and is the home of "Ben's Soft Pretzels" on State Road 5 in Shipshewana.

And we did have a wonderful trip. Seeing family was even better than the time I spent connecting with readers and doing a bit of research. :)

I am skipping the beans, all of 'em, and going straight for the pie! Must have pie. I haven't had homemade custard pie in ages. because I'm the only one who loves it, and I'd eat the whole thing. But right now I have eggs galore (happy spring hens) and milk. and pie crust in the freezer. Oh, I think this is a must! Coconut or straight.

The barn was built to be a commercial building - kind of a strip mall, I think - but then Ben's pretzel business boomed and they needed the room. Ben has a bakery just down the road for other baked goods, and the pretzels were threatening to overwhelm the smaller building. I do love to see the businesses thriving, though!

Custard pie. yum! I had two pieces while we were visiting Amish country. It was my mom's favorite pie, so I think of her whenever I eat it. :)

Lebanon balogna is made in Lancaster County, PA. I guess you could say it's a bit like Thuringer, but it has it's own flavor. The sweet version is my favorite.

Souse is a lot like head cheese, except it's made with all kinds of other stuff. With head cheese, you cook the head and get the meat off of that (trying not to go into too much detail here), while souse is made from the leftovers from making sausage and everything else you can get from a hog.

Soups Are Perfect in the Instant Pot

I did a search online for “pressure cooker ham and bean soup” recipes and there were a lot, but most of them also contained vegetables. I really didn’t think my hubby would appreciate having all those veggies in his bean soup. He’s kind of a purist when it comes to bean soup – ham, beans, and onion for garnish. So, experiment is what I did!


I even go further with my stir fries making them in the morning to fill pita breads or wraps so I can take some food on the go.

And this stir fry is also perfect for that because everything is chopped in small bit size pieces and doesn’t have any sauce that can drizzle, make the bread soggy or pour out whilst travelling or eating making it super easy to eat whilst on the go, it even tastes nice when is not absolutely hot making it perfect for work lunches.

Over the last two weeks we quickly worked through the fresh food in our refrigerator, and have moved on to the freezer and pantry.

Our governor also issued a mandate yesterday closing churches and other gatherings. Right this minute I’m prepping for a grocery delivery before that possibly shuts down as well.

I’m going through recipes that can be made with canned food, and other pantry and freezer ingredients. This way I can order recipe ingredients that will last for weeks or even months.

Since this list of canned food recipes is so helpful to me, I thought I would share it with you as well.

Three Bean Salad

The South African Braai. There is certainly nothing better than that. I think the best thing about a Braai other than the great company of friends, a few ice cold beers, the great food &ndash is the smell of a charcoal fire grilling a few fatty lamb chops. Absolutely to die for.

The thing that I find most appealing to Braais these days are the fact that the food prepared with a braai are mostly freshly made salads that just entices the summery feeling that is significant with this South African tradition.

This sort of eases the guilt when I think of other unhealthy meals I could have prepared instead. I prefer Braais now more than ever, since hubby and I changed our lifestyle to a healthier one. Still &ndash I might just be in denial &ndash but a piece of meat on the braai with a few healthy fresh sides seems like the way to go.

This recipe for Three Bean Salad is the perfect side salad for a Braai. I have to admit I never liked Bean Salads at all, and one day I just thought that I would try it out, and that was the end of me. It might not be the healthiest side dish, but it surely goes well with a Braai, or any roast for that matter. It has come accustomed for our family to present this salad with most birthdays and Christmases &ndash as we normally do the thing all South Africans do &ndash Braai.

There are loads of variations for this recipe of Three Bean Salad. This particular one has been adapted from the early version of the &ldquoHuisgenoot Wenresepte&rdquo &ndash which any South African baker would recognize as their favorite (and most used) book in their recipe book collection.

This recipe is really simple and so appropriate to prepare when you don&rsquot have lots of fresh ingredients on hand. It stays fresh for up to 5 days in the refrigerator, and then seems to be at its best. So whether you are camped out in the Kruger or living it up in a chalet next to the ocean &ndash this recipe is bound to be a life saver!
